That's right, I'm still playing around with rhubarb. There's tons of it around and people are happy to be rid of it. This idea came to me while I was flipping through a Canadian Living while waiting in the grocery store checkout line.St. John's folks, it's supposed to be beautiful and sunny this weekend, make up a batch of these and have a bbq.
4 cups sliced rhubarbSo.. the mix kinda stayed at the bottom while the club soda was on top.. I'm thinking next time, add club soda first, and mix the other ingredients separately. But all in all these were quite refreshing.
1 cup water
1 cup sugar
slice of lemon
Combine the ingredients in a pot, bring to a boil, turn the heat down and let simmer until the rhubarb breaks apart.
Using a fine sieve, pour out the hot syrup over a bowl and let it drain, you can push on the rhubarb, but do it gently, so you don't get strands in your syrup. Let cool.
This makes about a cup.. as it would.
Mojitos:
a handful of mint leaves
4 tbsp lime juice
1 oz rum
1/4 cup rhubarb syrup
club soda
Put the mint in a glass, crush until fragrant using the back of a spoon. Fill glass with ice. Add lime juice, rum, rhubarb syrup and stir. Add club soda, to taste.

Sounds awesome. I want to make this for sure!

hehe, yeah, that's what chop sticks are for in our house. But even after stirring, it kinda reseparated.
